I LOVE this recipe!!

I love to make fresh cranberry sauce every year. It is so easy peasy!! REALLY!!! You can get organized a couple days ahead of your event. You just need to make this yummy recipe and have it ready to go in the fridge. All the wonderful fresh ingredients are so amazing in this recipe!! And it is a very inexpensive side to make and take if you are going to someone’s home. They will think you are a really amazing cook!! 🙂 I am always shocked by that response!! I love using stevia. It not only saves you calories but also is a super source for nutrition.

This sweet lady has a wonderful Gluten Free and Sugar Free cookbook on my Christmas list!! 🙂 I know my family would so appreciate her yummy recipes!! Hmmmm, now can I only wait until Christmas!!! 😉 (She sells it on Amazon.)

Cranberry Clementine Sauce at lifeyourway.net

Cranberry-Clementine Sauce

makes about 2 cups

Ingredients:

  • 1/2 cup fresh squeezed clementine or orange juice
  • 1/2 cup water
  • 3/4 cup unsweetened, frozen apple juice concentrate, thawed
  • 1/2 teaspoon liquid stevia
  • pinch of cinnamon
  • 2 cups fresh or frozen cranberries

Directions:

Put the fresh squeezed juice, water, thawed juice concentrate, stevia, and cinnamon in a heavy-bottom medium sauce pan. Bring to a boil uncovered, reduce to a simmer and let cook for 5 – 8 minutes until the sauce thickens slightly. Stir in cranberries and simmer for about 20 minutes, stirring occasionally, until berries have cooked down and sauce starts to become jelly-like. Store in a pint mason jar in the refrigerator.

Note: If you double or triple the recipe, it will naturally take longer for the recipe to cook down.
