Frugal Fridays…Yummy, Easy, And Frugal Recipe…

Hello Dear Friends,

Sorry to be late on posting Friday’s postings. We had terrible weather yesterday and it knocked out all wi fi all day and even electricity was on and off throughout the day.


I thought I would share what we had for last night’s dinner. It so yummy and healthy!! And of course it was an easy peasy recipe!! LOVE IT!!

My guys went back for seconds…all of them!! 😉

Red Peppers (tops cut off and cleaned out…use and chop what pepper is still available of the tops in your stuffing)

1 lb. 93 % lean ground beef (turkey or chicken optional)

6 cloves garlic minced

2 medium onions chopped

1 large container of sliced baby portobello mushrooms

1 green pepper chopped

2T. Italian seasoning

2 t. fresh ground sea salt

2 t. fresh ground black pepper


After you have cut off the tops of all the peppers, cleaned out the seeds, set up your pan with all your peppers.


Be sure to use the portion of the tops to chop and add to veggie mixture.


Then once the remainder of vegetables are all chopped and minced place in a large mixing bowl.


Add ground meat, seasonings and mix all together well.

Once all is very well mixed stuff all into red pepper bottoms.


(I separate peppers with aluminum foil boats for our child with food allergies. I make sure to completely make a foil boat on the bottom sides and top when preparing the pan of food.)

Place all in the oven on 350 degrees for 30-45 minutes.


Top with grated sharp grated cheese and drizzle a little olive oil over the tops. Place all back into the oven to reheat the peppers.

So sorry…I was so excited, I took all up so quickly and served it…I missed the plated product picture!!

And before I could stop everyone they had at least half eaten their dinner and some were finished!! OK, now there’s a testimonial for you!! 😉

Tip: If you have extra stuffing just lay in the bottom of the pan. I serve this as “seconds” or just as a bed in the bowl for my “hungry guys”. 🙂


PTL, easy peasy, inexpensive (it is a great way to use up veggies) and so healthy!!
