Hello Dear Friends,
Last night I was bogged down with school. I had cooked some chicken breasts for chicken salad but will use that in a meal later this weekend. (I LOVE chicken salad…but it needs to sit in the fridge a little while before you eat it. All the flavors need to “melt” together a bit!! 😉 )
So I looked at this beautiful pot of chicken broth and thought…hmmm, I still have the veggies in it from cooking the chicken breast, how about a soup!! And what an amazingly healthy, cheap and easy use of this beautiful broth!!
I had a large amount of chopped kale and more veggies…yum!!
Here’s the quick recipe:
6 c. fresh hot chicken broth
2 heads of washed chopped kale
1-2 links of smoked turkey sausage (literally pulled from the freezer and sliced into pennies…easy!!)
2 c. chopped onions
1 bunch of chopped celery
1/2 c. chopped cilantro
5 minced garlic cloves
(I forgot but next time will add 1-2 c. sliced mushrooms
1-2 cans black beans (If I had time I would have cooked from scratch with the leftover broth. WOW!! Amazingly great beans!! But keep cans stocked for those crazy busy days too!!)
garlic salt, sea salt and fresh ground pepper to taste
2 T. Italian seasonings (optional)
Season to your liking…we LOVE garlic and even added more garlic powder!! 😉
Simmer all until veggies are tender.
Oh…fyi, all the chopped veggies were clearanced yesterday at the market…so no chopping!! They were perfect quality and again…easy peasy!! Plus we saved money!! WOW!! Woo Hoo!!! 🙂 OK stopping the happy dance…the Lord provides before we even know we need it!!
