Hello Dear Friends,

OK…here is my easy peasy version of the Thai Coconut Soup!! It was amazingly good!! All went back for seconds, thirds and some fourths!!

OK…my version is SUPER easy!! πŸ™‚

In a dutch oven boil 1 lb. boneless chicken breast in filtered water.

Once all meat is cook, tear or cut into small bites. Add 3-4 cans of coconut cream milk. Also add 1 quart of coconut milk. Add 1-3 cups of sliced mushrooms (we used portobello) and 2 chopped onions. Slow cook on low. Add 1-2 T. of minced garlic and 1-2 T. of minced ginger. Salt and pepper to taste.

Once all is cooked well serve in bowls and add 1-2 T. of lime juice per bowl. Stir well and top with chopped green onions.

YU-UU-UM-MY!!!! πŸ˜‰

I will save all leftovers, if any!! πŸ™‚ Reheat, add lime juice and top with chopped onions.

Β Voila!! Healthy meal served!! πŸ˜‰

PS…this is the Thai Peanut noodles I served with it. Simple noodle kit from the market.

I followed instructions on the box, added 1 t. sesame oil (enriches the flavor), sliced water chestnuts, chopped green onions and sliced bamboo shoots.
