Here’s an easy peasy crockpot meal we had last night for dinner!!
After being soooo busy and tired last night, it was sooo nice to have almost all done by last night.
We saved the extra bbq chicken in our freezer for another dinner, ready to go!
A little organization goes a long long way!!

CROCKPOT BBQ Chicken
Spray your crockpot with cooking spray.
Add 4 large chicken breasts (at least 3 lbs).
Rough chop and add 2 large red onions.
3-4 large red, yellow or orange peppers rough chopped added.
1 bottle of your favorite bbq sauce (we love the cola flavored…the only sodas we drink!! 😉 )
Cook all on high for 3 hours then turn to low for at least 2 more hours. Cut up your chicken when ready to serve (I use kitchen scissors and tongs.) Then serve over your favorite rice. We served ours over brown basmati rice from the Indian Market…fluffy and extra light rice.
Easy peasy and dinner was all but the rice ready!! So healthy, economical and delicious.
