Grilled Fajitas

Spice-Rubbed Flank Steak with Fresh Salsa

Hello Dear Friends,

Down in the South we LOVE fajitas. I have been cooking them since college. I have friends that stay way away from fajitas thinking the meat is to tough. Or they just don’t dare try all the seasonings.

🙂 OK easiest recipe ever….healthy and inexpensive too!

flank steak (tenderized is best…it will look ridged. If not…pound it a little, if you have time. If not marinate a little longer…a couple of hours only.)

your favorite italian dressing

sea salt


1-2 garlic cloves minced

1-2 onions rough chopped

1-2 peppers (we love red, yellow orange, purple…they are a bit sweeter than green, but green is what is usually used)

1 large freezer zippered plastic bag

Place all items in your plastic bag, seal, place bag in a large bowl in fridge for 3-4 hours to marinate.

Heat your grill or stove top.

If cooking on a grill, place two layers of foil and pour all items from plastic bag into foil. At this point you can also add sliced peppers to the foil for cooking.  Fold foil and place on grill. Half way through cooking (check as you go) open foil and flip meat. Leave foil open.

The final few minutes set meat on grill for searing those lovely marks and intensified flavor.

You can also cook everything all on your stove top in a skillet too! 🙂

Take veggies and meat off the grill. slice meat across the grain in thin strips.

Serve with guacamole, grated cheese, salsa, pica de gallo and sour cream/plain yogurt on your favorite corn or flour tortillas.
