Hello Dear Friends,
Tonight we are tired and needing something healthy and cost effective.
So we reached into our garden harvest basket and came out with a huge lovely yellow squash. (When left too long in the garden squash can grow to be huge!! We are finding new ways to use them…yum!! We use to feed them to the chickens thinking they had gone to seed.)
Dinner was unbelievable tasty and completely satisfying!!
Our son said twice how flavorful!!
Praise the Lord for His bountiful blessings and nourishing meal for our family!!
First add to a heated ss pan, olive oil or coconut oil to coat the bottom of your pan. Then add 1-2 chopped onions, 8-12 chopped garlic cloves and 1 pennied hickory smoked turkey sausage link all cooked until caramelized and meat is browned.
Don’t let it burn but browned provides all that yummy flavor!! 😉
Cut up 1 outrageously large squash, sliced and then chopped.
Then add your garden squash to your pan. Cook until just before tender.
Then wash and chop 1-3 large bunches of organic kale…depends on your family’s needs.
Even though this is a very large skillet, you can see how high the kale is piled. (Pile it on as it will cook way down. And Kale is sooooo good for you..the more the better!!)
Ok…yes we were being silly!! But just to let you know how high!! 😉 Also, once cooked down a bit, then put your cover on your pan for the last few minutes to tender the greens. Once tendered stir well into your pan of yumminess!! 😉
Add sea salt and black pepper to taste.
You can eat fresh out of the skillet…plain.
You can top with shredded Parmesan or even vegan Parmesan for the casein free eaters.
And on the days when it has been a long day…use your disposable “fine” china!! 😉
Voila!! They came back for seconds!!
And one hint, my son carried on and on as to how wonderful tasting the sausage was. So hickory smoked sausage with fresh garlic…you just can’t go wrong!! PTL!!!
