Brunch Chimichangas Recipe From Wild Tree

This is so yummy sounding!! I hope you all enjoy such a healthy meal!! Now…just an FYI…I would use a whole grain tortilla like Food For Life Ezekiel Sprouted Tortillas for the flour tortillas, Organic, organic turkey sausage for the chorizo and I would exchange the milk with coconut milk. (Due to food allergies in our family) Mmmmmm!!! 🙂

Brunch Chimichangas - Wildtree Recipes

1 (14.5 ounce) can diced tomatoes¼ cup Wildtree Fiesta Salsa Mix1 avocado2 teaspoons Wildtree Guacamole Seasoning2 teaspoon Wildtree Natural Grapeseed Oil. divided4 ounces chorizo, diced4 eggs

1 tablespoon milk

1 teaspoon Wildtree Garlic Galore Seasoning Blend

4 (6 inch) flour tortillas

Method of Preparation

In a bowl combine the diced tomatoes, and the Fiesta Salsa Mix. Chill in the refrigerator for about an hour. Slice the avocado in half, twist to separate. Remove the pit. Scoop out the flesh and mash with a fork. Stir in the Guacamole Seasoning; set aside.  Preheat oven to 475°F. Heat 1 teaspoon Grapeseed Oil in a medium nonstick skillet over medium high heat. Add the diced chorizo and sauté until lightly browned.  In a bowl whisk together the eggs and Garlic Galore Seasoning. Add the eggs to the skillet with the chorizo and scramble to desired doneness. Transfer the eggs to a bowl and stir in the prepared Guacamole. Divide this mixture among the 4 tortillas. Tuck in each side and roll up like a burrito.  Place the chimichangas on a baking sheet and brush with the remaining teaspoon of Grapeseed Oil. Bake fro 10-15 minutes or until the tortillas are lightly brown and crisp. Serve with the prepared Salsa.
