I have been on a saving money, healthy eating bender!! ;)

I LOVE our grocery store’s discounted produce!! I am extremely picky in regards to produce!! But our grocery does a great job of marking items down and they are all wonderfully still good!!

So lunch today was whole wheat veggie/cheese quesadillas!! YUM!!!  Tonight’s dinner is an incredible stuffed red pepper!! My family’s favorite!! YUMMY!!!

The recipe is as follows:

Healthy Quesadillas

Heat well a ceramic pan. Spray with a good quality/healthy olive oil. Lay 1 WW tortilla in pan. Sprinkle a grated aged sharp cheddar cheese, chopped onions, choppes cilantro, chopped garlic and then lastly layer a bit more of the aged sharp cheddar cheese then top with 1 WW tortilla. You can also layer in pinto beans, black beans, chopped chicken, ground beef, chopped beef, ground turkey, etc.

Heat through, press down top tortilla as you cook. Once lightly browned, flip quesadilla and brown the other side. Once finished plate quesadilla, cut into 4 sections, top with any of the following: salsa, guacomole/slightly mashed avocado, sour cream, lime, chopped tomatoes, etc. Choose toppings as you desire. I genuinely love to keep it simple. I love all the fresh, raw veggies and the simple quesadilla. I don’t use salt as I use a lime to add a wonderfully fresh seasoning!! ENJOY!!! :)

Stuffed Scrumptious Red Peppers

Fill a large mixing bowl with 1 lb. of ground beef. Wash 5 large red peppers. Cut off the tops and clean out the seeds and veins.

Chop the following veggies: onion, garlic, red portion of the top of the large red peppers, chop 1 large portobello mushroom, cilantro or parsley and chopped pecans or walnuts. Add a handful of WW breadcrumbs, 1 cup of aged grated cheddar cheese and 1/2 cup of grated Parmesan cheese. Mix all items together. Spray with a good olive oil on your casserole dish. Take your wonderful well mixed mixture and stuff your red pepper bottoms. Stuff to overflowing and allow to spill over in the pan. Bake in the over for 45 minutes to 1 hour at 350 degrees.

 

Take up 1 pepper per person and serve with a good ww toasted slice of french bread and beautiful green salad. YUM!!!! Eating my dinner as I type!!! :) I pray you will tweak these simple recipes to bless your family!! I love the more veggies than meat/cheese/nuts. But I do use all of these whole foods products. I don’t put measurements on these two recipes as I think each family should develop to your family’s likings. :) May the Lord bless your family and your hard work to bless each one in your family!! “Whatever your hand finds to do, do it with all your might” Eccl. 9:10
