Alea’s Yellow Squash Pizza Boats

Yield – 6 servings

Preparation Time – 10 minutes

Cooking Time – 25 minutes

Ingredients

  • 3 yellow squash
  • olive oil
  • garlic powder, onion powder, oregano, basil, thyme
  • 1 – 1 1/2 cup pizza sauce (Easy Pizza Sauce Recipe)
  • 1 1/2  – 2 cups cheese
  • pizza toppings (pepperoni, diced tomato, onions, mushrooms, olives, peppers, etc.)

Directions

  • Preheat the oven to 350 degrees. Brush a casserole dish with olive oil. Sprinkle the dish with garlic powder, onion powder, oregano, basil, and thyme.
  • Cut the squash in half length-wise and scoop out the seeds.
  • Place some of the pizza toppings inside the boat.
  • Spoon pizza sauce over the toppings.
  • Place a couple of tablespoons of cheese on top of the pizza sauce.
  • Add more of your favorite toppings.
  • Bake at 350 degrees for 25 minutes.
  • YUMMY!!!  And so affordable and healthy!!! YEA!!! :)

Zesty Egg Salad

We have so many eggs from our poultry, I am always looking for good recipes! This looks wonderful! And I always serve egg salad on top of a nicely toasted piece of whole grain or gluten free bread!! YUM!!! ;)

Zesty Egg Salad Zesty Egg Salad

Yield – 4 servings

Preparation Time – 10 minutes

Cooking Time – 20 minutes to boil, an hour to cool the eggs

Ingredients

  • 8 eggs, hard boiled and chilled
  • 3-4 Tablespoons mayo (or more if you want it creamier)
  • 1 teaspoon prepared mustard
  • 1 Tablespoon horseradish sauce (or more if you want it zestier)
  • 1 bunch green onions, chopped
  • Salt and pepper to taste
  • Pita chips, for serving

Directions

  • Chop up the hard boiled eggs with a pastry blender, or forks in a mixing bowl.
  • Stir in the mayo, mustard and horseradish sauce until creamy. Gently stir in the chopped green onions. Season with salt and pepper to taste.
  • Serve Zesty Egg Salad on pita chips.
  • Side dish suggestions: favorite fresh fruit, baby carrots, cucumber slices, or other favorite veggie.

Crock Pot Beef Stroganoff

Ingredients

  • 3 cans of cream of soup -undiluted. (Most people use cream of mushroom. I use cream of chicken.)
  • 1 cup sour cream
  • 1/2 cup of water
  • 1 package dry onion soup mix (1 oz)
  • 2 pounds of raw beef stew meat
  • 1 lb. wide egg noodles
  • Veggies for side dish

Directions

  • Combine all ingredients except noodles and stir until well coated.
  • Cover and cook on low for 6 hours or on high for 3.
  • Serve over cooked rice or egg noodles with side of veggies. Yum-O!

      Yes…all her recipes are soooo yummy and cost effective!! LOVE IT!!!
      I get everything through 5dollardinners.com. Just look under the recipes tab under Alea or Angie or any of the other yummy ones in the recipe index.
      Erin collects wonderful cost effective recipes from incredible ladies as well as her own great recipes!! FUN!!! :)

      Alea’s seem to be only on 5dollardinners.com…at least that is what I found under the recipes I checked. But when you look her up under the recipes she has a link to Facebook and Twitter. Maybe that’s a good way to connect?

      • Not yet…but we are going on a business trip with a full kitchen, and that will be a fun thing to make for all of us!! ;)
        And I have to be sure I have others who will eat them…I have to get back on the “wagon”!!! ;) And I can be a huge cookie monster!!

        I will let you know how the cookies turn out!! “) I am printing the recipe to take with us. My youngest LOVES to bake and to boot an AMAZING baker!! So I am hoping she’s game!! :)
